Black-eyed beans with vegetables (bok choy, onions, tomatoes) makes for a light, palate-cleansing broth. Mango salsa! On steamy summer nights this is what I crave- freshly diced mango, tomatoes, cucumbers, onions and peppers seasoned with a sprinkling of cilantro and chili. Lemon juice may be added.
